Chef de Partie – Gerbou Restaurant (Emirati Fine Dining, Dry Restaurant)

Location: Nad Al Sheba 1, Dubai, UAE

Employment Type: Full-Time

Gerbou is a dry restaurant, focusing on exceptional food pairings, traditional beverages, and an elevated non-alcoholic dining experience.

Job Summary:

Gerbou is looking for a skilled and passionate Chef de Partie (CDP) to join its dynamic kitchen team. The ideal candidate will have extensive experience in fine dining, a strong knowledge of Emirati cuisine, and the ability to execute high-quality dishes with precision and creativity.

As a Chef de Partie, you will be responsible for managing your section of the kitchen, ensuring dishes are prepared to the highest standards, maintaining consistency, and contributing to the restaurant’s vision of modern Emirati gastronomy.

This role requires a chef with technical expertise, a strong understanding of ingredients, and the ability to work efficiently under pressure. You will play a key role in menu execution, mise en place preparation, and mentoring junior chefs while upholding Gerbou’s commitment to culinary excellence.

Key Responsibilities:

Culinary Excellence & Menu Execution

  • Prepare and execute high-quality dishes in accordance with Gerbou’s fine dining standards.
  • Ensure consistency in taste, texture, and presentation of all dishes.
  • Work closely with the Sous Chef and Head Chef to develop and refine dishes.
  • Maintain knowledge of Emirati cuisine, incorporating traditional flavors with modern techniques.
  • Ensure that all ingredients are handled, stored, and prepared to the highest standards.

Section Management & Kitchen Operations

  • Manage a specific section of the kitchen (hot kitchen, cold kitchen, grill, pastry, etc.), ensuring smooth operations.
  • Supervise junior chefs and commis chefs, providing guidance and training as needed.
  • Oversee mise en place preparation, ensuring all ingredients are ready for service.
  • Maintain strict kitchen hygiene and food safety standards, following UAE regulations.
  • Monitor portion control and minimize waste, adhering to cost and quality control guidelines.

Collaboration & Innovation

  • Contribute ideas for menu development, helping to create innovative Emirati dishes.
  • Collaborate with the Head Chef to refine recipes and enhance the overall guest experience.
  • Stay updated on culinary trends and techniques, bringing fresh ideas to the kitchen.
  • Participate in tastings and pre-service briefings to ensure alignment with the restaurant’s vision.

Guest Experience & Presentation

  • Ensure all dishes are plated elegantly and consistently in line with fine dining presentation.
  • Work closely with front-of-house staff to accommodate guest requests and dietary preferences.
  • Uphold Gerbou’s commitment to Emirati hospitality, ensuring dishes reflect the warmth and richness of local culture.

Requirements:

  • Minimum of 5 years of experience as a Chef de Partie in a fine dining restaurant.
  • Extensive knowledge of Emirati cuisine, including traditional ingredients and cooking methods.
  • Strong expertise in plating techniques, flavor pairing, and high-end culinary execution.
  • Ability to thrive in a high-pressure kitchen environment while maintaining attention to detail.
  • Experience working with premium, locally sourced ingredients.
  • Strong leadership and mentoring skills, with the ability to train junior chefs.
  • Excellent communication skills and a team-oriented mindset.
  • A passion for culinary innovation, bringing creativity and excellence to every dish.
  • Well-versed in kitchen hygiene, food safety, and HACCP regulations.

Preferred Qualifications:

  • Experience working in Michelin-starred restaurants, five-star hotels, or high-end dining venues.
  • Prior experience with modern Emirati gastronomy and contemporary presentation techniques.
  • Familiarity with traditional Emirati beverages and food pairings.
  • Knowledge of dry restaurant culinary approaches, focusing on non-alcoholic pairings.
