Role Overview

We are looking for an experienced Pastry Chef or Product Development Chef to create a distinctive, premium brownie recipe for a new dessert brand.

The ideal candidate should have strong experience in brownies, cookies, cakes, and commercial bakery production. The objective is to develop a brownie that is rich, visually appealing, consistent, easy to reproduce, and suitable for delivery and commercial-scale production.

Key Responsibilities

  • Develop an original premium brownie recipe with a rich chocolate flavour and distinctive texture.
  • Create different recipe variations for testing, including fudgy, chewy, soft-centre, and crispy-edge options.
  • Conduct tasting and testing sessions until the final recipe is approved.
  • Ensure the brownie maintains its quality, texture, and appearance after cooling, packaging, storage, and delivery.
  • Standardize all ingredient quantities, preparation methods, temperatures, baking times, and portion sizes.
  • Recommend suitable ingredients and suppliers available in the UAE.
  • Calculate the approximate ingredient cost per brownie, box, and production batch.
  • Develop instructions for small-batch and larger commercial production.
  • Train the production team on preparing and baking the final product.
  • Assist with developing additional flavours, toppings, fillings, or limited-edition products when required.
  • Identify potential production issues and recommend quality-control procedures.

Candidate Requirements

  • Proven experience as a Pastry Chef, Bakery Chef, Chocolatier, or Product Development Chef.
  • Strong knowledge of brownies, chocolate desserts, and commercial baking.
  • Experience developing recipes for cafés, bakeries, restaurants, cloud kitchens, or food brands.
  • Ability to create consistent products across multiple production batches.
  • Understanding of ingredient costing, shelf life, packaging, and delivery requirements.
  • Strong attention to detail and willingness to test and refine recipes.
  • Culinary or pastry qualification is preferred but not essential.

Intellectual Property and Confidentiality

The selected chef will be required to sign a confidentiality and recipe ownership agreement. Once the project has been completed and paid for, the final recipe, preparation methods, documents, and related product-development materials will become the exclusive property of the company.

Pay: AED4,500.00 - AED7,937.72 per month
