About Billo

Billo is a South Asian café in Oud Mehta serving all-day breakfast, chai, bun kebabs, chaat, and a full dessert program — falooda, kulfi, milkshakes, and ice cream. We recently revamped and expanded the menu and now operate from 8am to 2am. We're building a small, tight team and need a cook who can own the kitchen.

The Role

You'll be the main cook at Billo. The kitchen is small — 200 sq ft — and the menu is focused. Most of the heavy prep (patties, grilled meats, ice cream) comes in ready from our central kitchens. Your job is to cook the fresh stuff right and run a clean, organised station.

Morning Block (8 am – 2pm)

You own breakfast. Every egg dish, every paratha, every chai order. This is the core of what you do.

Evening Block (7pm – 11 am)

Hot food support — bun kebabs, rolls, haleem, loaded fries, snacks. Mostly reheat and assemble, but speed and consistency matter.

• Egg dishes — Shakshouka, Anda Ghotala, Bhurji, Half Fry, Desi Omelette
• Keema Anda Paratha
• All chai varieties — Home Style, Elaichi, Masala, Adrak, Sulemani, Ginger Lemon
• Sandwiches — Egg Mayo, Chicken Mayo

Evening (reheat + assemble)

• Bun kebabs — griddle and build
• Rolls — fresh paratha wrap, pre-grilled boti filling
• Haleem — reheat and garnish
• Masala Fries and Keema Loaded Fries
• Mozzarella Sticks and Kids Meals

What We're Looking For

• 2–3 years experience in a café, canteen, or fast-casual kitchen
• Comfortable cooking eggs multiple ways under pressure
• Can manage a flat grill, fryer, and hot plate simultaneously
• Works clean and organised — small kitchen, no room for mess
• Consistent — every dish looks and tastes the same, every time
• No gas — all electric equipment; experience preferred but we'll train
• Can work split shifts: morning and evening with a break in between

Straight Talk

This is not a hotel kitchen. There's no brigade, no sous chef standing next to you. You'll be running the kitchen largely on your own during your shift. If you need someone to tell you what to do every step of the way, this isn't the right fit.
