1. JOB PURPOSE

The Restaurant Manager is responsible for the overall daily operation, sales performance, delivery optimization, profitability, service quality, staff management, and compliance of the restaurant.

The role requires a hands-on and commercially focused manager who can lead the team, deliver excellent customer service, control costs, maintain operational standards, and ensure smooth coordination between the kitchen, service team, suppliers, mall management, and senior management.

2. KEY RESPONSIBILITIES

Operations

• Manage daily opening, operation, and closing of the restaurant.
• Ensure smooth coordination between Front of House and Kitchen.
• Maintain service quality, cleanliness, restaurant presentation, and operational standards.
• Monitor staffing levels, customer flow, service times, and overall restaurant performance.
• Identify and resolve operational issues promptly.
• Ensure company SOPs and management instructions are followed.

Sales & Profitability

• Monitor daily, weekly, and monthly sales against targets.
• Drive sales through upselling, customer service, promotions, and improved guest experience.
• optimize and work on online delivery
• Monitor average check, menu performance, and customer traffic.
• Control food, beverage, labor, and operational costs.
• Monitor wastage, discounts, voids, complimentary items, and cash discrepancies.
• Support budgeting, forecasting, and profitability improvement.

Customer Experience

• Maintain high standards of hospitality and customer satisfaction.
• Handle and resolve customer complaints professionally.
• Monitor customer feedback and online reviews.
• Ensure fast, accurate, and professional service.

Staff Management

• Lead, motivate, and supervise restaurant staff.
• Prepare staff schedules and monitor attendance.
• Conduct daily briefings and communicate targets.
• Monitor grooming, performance, discipline, and service standards.
• Identify training needs and coach employees.
• Recommend staffing, disciplinary, and performance actions when required.

Food Safety & Hygiene

• Ensure compliance with Dubai Municipality and food-safety requirements.
• Monitor hygiene, cleaning, food handling, storage temperatures, and pest control.
• Ensure all restaurant areas remain clean, safe, and properly maintained.

Stock & Inventory

• Monitor stock levels and consumption.
• Conduct regular inventory checks.
• Control wastage, spoilage, and stock discrepancies.
• Ensure proper receiving, storage, and FIFO procedures.

Reporting

Provide management with accurate daily/weekly/monthly information covering:

• Sales and guest count
• Cash reconciliation
• Discounts and voids
• Wastage
• Staff attendance
• Customer complaints
• Stock discrepancies
• Maintenance and operational issues
• Cost and performance observations

Mall & Supplier Coordination

• Coordinate operational matters with Dubai Outlet Mall management.
• Ensure compliance with mall requirements and approved procedures.
• Coordinate with approved suppliers, contractors, maintenance, cleaning, pest-control, and other service providers.
• Ensure no unauthorized work or contractor activity takes place.

3. KPIs

Performance will be measured against:

• Sales achievement
• Average check
• Customer satisfaction
• Food and beverage cost
• Labor cost
• Wastage
• Cash and inventory variance
• Staff attendance and performance
• Service speed
• Hygiene and operational compliance
• Overall restaurant profitability

4. AUTHORITY & LIMITATIONS

The Restaurant Manager has authority to manage daily operations, staff deployment, customer issues, and routine operational matters.

However, written management approval is required for major expenditures, contracts, supplier changes, significant discounts, menu price changes, employee termination, financial commitments, structural modifications, or any matter affecting mall approvals or permits.

5. QUALIFICATIONS & EXPERIENCE

• Minimum 5 years' restaurant/hospitality experience.
• Minimum 2–3 years in a supervisory or management position.
• UAE/GCC experience preferred.
• High-volume or mall restaurant experience is an advantage.
• Strong leadership, communication, customer-service, and problem-solving skills.
• Good understanding of restaurant P&L, costs, POS, inventory, and sales.
• Fluent English required; Arabic is an advantage.
• Ability to work flexible shifts, weekends, and public holidays.

6. CORE OBJECTIVE

The Restaurant Manager's primary objective is to ensure that Kazdoura operates as a profitable, efficient, well-managed, clean, safe, and customer-focused restaurant, while maintaining strong control over sales, costs, staff performance, service quality, and company assets.

The successful candidate must be hands-on, commercially minded, accountable, proactive, and results-driven.

Pay: AED6,000.00 - AED12,000.00 per month

Experience:

• restaurant with shisha : 5 years (Preferred)
• touristic restaurant : 5 years (Preferred)
