Role purpose

The Waiter is responsible for managing the complete guest journey at assigned tables, from welcome and menu guidance through order taking, service, payment and farewell. The role requires strong menu knowledge, accurate coordination with the kitchen and bar, confident recommendations, attention to timing and full ownership of guest satisfaction.

Key responsibilities

· Arrive on time, fully groomed and in correct uniform, ready for the pre-shift briefing and station preparation.

· Prepare and maintain the assigned section, side station, service equipment and mise en place before, during and after service.

· Welcome guests warmly and follow Le Guilan’s service sequence and communication standards.

· Introduce the restaurant concept and guide guests through the menu, ingredients, preparation methods and cultural elements of the dining experience.

· Identify dietary restrictions and allergies, communicate them clearly and follow the correct safety procedure.

· Take orders accurately and enter them promptly into the POS system.

· Recommend dishes and beverages naturally, including appropriate additions and upselling without pressuring the guest.

· Coordinate with the Head Waiter, runners, kitchen and beverage team to ensure correct pacing and presentation.

· Serve food and beverages professionally, announcing dishes clearly and observing table etiquette.

· Monitor tables continuously, anticipate guest needs and conduct timely satisfaction checks.

· Resolve minor concerns calmly and escalate complaints or service failures promptly to the Head Waiter or Floor Manager.

· Present bills accurately and process payments according to company procedure.

· Reset tables promptly and maintain the cleanliness and visual standard of the dining room.

· Support breakfast, buffet, lunch, dinner, events and other restaurant service periods as assigned.

· Complete opening, closing and handover checklists and report guest feedback, incidents, shortages or maintenance concerns.

· Follow Le Guilan’s standards for attendance, conduct, teamwork, privacy and guest communication.

· Comply with Dubai Municipality requirements, HACCP principles and all food-safety, hygiene and workplace-safety procedures.

Service standards

· Acknowledge and welcome guests promptly and warmly.

· Offer water immediately and ensure coffee or tea is delivered within the required service time during breakfast.

· Maintain high order accuracy and confirm special requests and allergies.

· Check guest satisfaction shortly after food is served without interrupting the experience.

· Deliver the bill promptly when requested and close every interaction with a genuine farewell.

· Keep the assigned section clean, organised and fully prepared throughout the shift.

Candidate requirements

· Minimum 1 year of waiter or server experience in a restaurant, hotel or premium hospitality environment.

· Strong spoken English; additional languages are an advantage.

· Sound knowledge of restaurant service, table etiquette and food and beverage terminology.

· Ability to learn and confidently explain a detailed menu.

· Comfortable using POS systems and handling payments.

· Strong communication, observation and problem-solving skills.

· Polished appearance, excellent personal hygiene and professional body language.

· Ability to remain calm, accurate and welcoming during busy services.

· Physically able to stand for extended periods and carry service trays safely.

· Flexible availability for rotational shifts, weekends and public holidays.

· Currently based in the UAE or able to relocate to Dubai.

Preferred

· Experience in fine dining, premium casual dining or a five-star hotel.

· Knowledge of Persian or Middle Eastern cuisine.

· Food-safety or hospitality training certification.
