Position :- Pub Head Chef

Location :- Abu Dhabi

Job Description :-The Head Chef is responsible for overseeing all kitchen operations within the pub, ensuring high-quality food preparation, consistency in presentation, food safety compliance, cost control, and effective management of the kitchen team. The Head Chef will develop menus, manage inventory, maintain kitchen standards, and contribute to the overall success and profitability of the pub.

Key Responsibilities:

Kitchen Operations

  • Lead and supervise all kitchen activities to ensure efficient daily operations.
  • Prepare, cook, and present food to the highest standards.
  • Ensure consistency in food quality, taste, portioning, and presentation.
  • Monitor service periods and coordinate with front-of-house staff to ensure smooth operations.
  • Maintain cleanliness and organization throughout the kitchen.

Team Management

  • Recruit, train, supervise, and motivate kitchen staff.
  • Prepare staff schedules and manage manpower requirements.
  • Conduct performance evaluations and provide coaching and development.
  • Ensure all team members follow company policies and kitchen procedures.
  • Foster a positive and professional working environment.

Menu Development

  • Design and update pub menus, specials, and seasonal offerings.
  • Introduce new dishes and promotions to increase guest satisfaction and revenue.
  • Ensure menu items meet company quality and profitability objectives.
  • Standardize recipes and preparation methods.

Food Safety & Hygiene

  • Ensure compliance with all food safety, hygiene, and sanitation regulations.
  • Maintain HACCP and municipality health standards where applicable.
  • Conduct regular checks of food storage, labeling, and temperature controls.
  • Ensure proper handling of food and kitchen equipment.

Inventory & Cost Control

  • Manage purchasing, receiving, and storage of food supplies.
  • Monitor stock levels and minimize waste.
  • Control food costs through proper portioning and inventory management.
  • Conduct regular inventory counts and prepare stock reports.
  • Work with suppliers to maintain quality and cost-effective purchasing.

Financial Responsibilities

  • Manage kitchen budgets and food cost targets.
  • Analyze sales and food cost reports to improve profitability.
  • Control labor costs through effective scheduling and productivity management.

Qualifications & Skills:

  • Diploma or certification in Culinary Arts or a related field preferred.
  • Minimum 3–5 years of experience as a Sous Chef or Head Chef in a pub, bar, restaurant, or hospitality environment.
  • Strong knowledge of pub cuisine, food preparation techniques, and kitchen operations.
  • Excellent leadership and team management skills.
  • Strong understanding of food safety and hygiene standards.
  • Ability to work under pressure in a fast-paced environment.
  • Good organizational, communication, and problem-solving skills.
  • Proficiency in inventory management and cost control.
